Sunday is the day when I try to do something to change up the breakfast routine. We eat eggs Monday-Saturday, and lets face it, eggs can get boring….FAST! When I initially saw this recipe I thought of my sweet potato loving husband. I have never liked sweet potatoes, but I figured I’d be brave and give them a try. WOW, amazing….I can’t believe I have been missing out on them all these years! It was seriously one of the best breakfast meals I have ever had in my life! I found the recipe on Health-Bent where I have been finding a lot of new great things lately. I decided I would double the ingredients to make a big batch, I love having left overs in the house.
It was a little time consuming to make, from start to finish it took me about an hour and 15 minutes, but like I said, I doubled it which meant more to cook. I found that if you make them in large silver dollar sizes they stayed together better then if you were making a larger normal sized pancake. This will be a Sunday morning breakfast favorite for years to come!
