Sitting home watching all these amazing Olympians on TV has been so much fun. It’s certainly motivating me to continue to live a healthy life!
On that note I came up with a fun and simple chicken recipe today! I’m wrapping a lot of things in bacon nowadays. My youngest son will pretty much eat anything that has bacon on it, it’s my sneaky way to get some quality food in him. So I made what I am calling Maple Mustard Bacon Chicken! Man was it tasty!
Here’s the 411:
MAPLE MUSTARD BACON CHICKEN
Prep Time: 6 hrs 10 minutes
Cook Time: 40 min
Ingredients:
6 Oz Paleo Chef Maple Mustard Sauce
1Tsp Sea Salt
2 lbs of Chicken Breast
1 Pound of uncured Bacon
1tsp of chopped garlic (optional…I like garlic in everything
)
Method:
Slice your chicken breasts into medium size slices and place them in a large ziploc bag. Sprinkle chicken with 1tsp of sea salt and pour 6oz (half a bottle) of Paleo Chef Maple Mustard sauce and add the optional garlic. Put in fridge and marinate for about 6 hours (or longer).
Once it is finished marinating pre-heat your oven to 350 degrees.
While oven is pre-heating start to wrap your chicken with the bacon, covering it completely. No need to use tooth picks or anything to hold the bacon in place…it should hold fine if you wrap it tightly.
Place in a pyrex baking dish and pour remaining mustard sauce from ziploc bag on top.
Bake for about 40 minutes. You can tell it’s done once your bacon looks brown.
Note: The bacon will not have a crispy appearance as if you were frying it.
Pair it with your favorite vegetable and enjoy!
