I was experimenting this morning and came up with an idea how to cook my almost 3 pound pork roast. Here’s what went down:
Ingredients
1 Pork Roast (mine was 2.85 pounds)
1 Cup of Water
1 whole yellow onion
2 tbsp Sugar Free Apricot Preserves
1 tbsp Spicy Mustard
Sea Salt as needed
Method:
I pulled out my crock pot and put 1 cup of water in the bottom, then added my pork roast. I then sliced my onions and placed some on top of my roast and the rest surrounding the bottom. At this point I mixed my apricot preserves with the mustard and clumped it all on top of the pork. I set the crock pot to low and let it do the rest of the work for 8 hours.
After the 8 hours I pulled the pork apart mixing it well with the apricot blend and onions. The pork was nice and tender, and had a nice mild fruity flavor to it.
